Search your area for a butcher shop or specialty meat vendor. These local businesses often run low prices on overstocked items and offer a variety of meats not available in most supermarkets. This allows you try a small portion of something new before committing to a large bulk buy. Butchers can also offer you a very large cut (side) of meat at a discount. When you purchase like this you can also request how the meat is cut up, but make sure you have enough freezer space.
