First, visit the websites of all the cable and satellite providers in your area. Comcast, DirecTV and Dish Network, for example, all have robust descriptions and lists of products, programming packages and features available, as well as current specials and promotions. Compare not only the prices of the packages, but which providers offer the channels and features you want the most. This will provide basic info that may limit your options (such as a certain service not being available in your area).

Look for customer feedback as well since that can give you a first-hand perspective on services these companies offer.
